Hey ho, another round of illness here we go.

Baby hit 102, and I’ve spent the last few nights walking literal grooves into my floor because apparently sitting down is illegal when you have a sick baby. Cool cool cool.

But life goes on, and everyone else still needs to eat. Myself included.

I’m a big fan of bento-style lunches, which in my world means: no cook, minimal prep, slightly chaotic “girl dinner” energy. At this point I’m basically just taking a page out of my toddler’s lunchbox and eating her… leftovers? If you want to call them that.

So after staring blankly into my fridge at 7am one too many times, I made myself a cheat sheet for easy, no-cook lunches. And since it’s been saving me, I figured I’d share it, plus a couple other things that have made mornings less painful.

Because honestly? Lunch is not where we need to be overachieving right now. As much as I’d like to be making everything from scratch, these days we’re going for edible, mostly balanced, and most especially, fast.

🍽 Stop “making lunch.” Start assembling it.

👉 This is not a recipe situation. This is a grab a few things and move on situation.

I made a simple cheat sheet you can keep on your phone or fridge.

60-Second Lunches

Pick a few things, pack it, done.

It’s basically 1 each of protein/carb/fruit or veg/little treat. Revolutionary? No. Useful? Yes. Everything on it is store-bought friendly, zero or near-zero prep, and easy to find at any normal grocery store.

We also included a few “weirdly works” foods (looking at you, edamame and dates) because some of our biggest wins were not what we expected.

Use it as:

  • a grocery list

  • a lunch plan

  • or just something to glance at when your brain is offline

If you packed 3 things, you packed a lunch. If you packed 4, you’re thriving.

⚡ Your freezer isn’t working hard enough.

👉 We still love Frozen. Not the movie (well, that too). But we mean the food.

Your freezer is basically a stash of future lunches you don’t have to think about.

Stock it once, and suddenly you have options when you’re running on fumes.

Some favorites that actually work:

  • dumplings (potstickers or bbq pork buns are favs here and widely available)

  • taquitos

  • mini empanadas

  • spanakopita (TJ's has this, or these mini ones are fun)

  • frozen waffles or pancakes (with protein is even better, like Kodiak brand)

  • meatballs or veggie balls

  • frozen pasta portions (The Veggie Pastas from Bird's Eye are surprisingly yummy, high in fiber AND actually taste like pasta. Kid and adult approved.)

  • pizza rolls (we buy the Annie's brand to feel healthier)

  • falafel + naan 

Throw 'em in the air fryer or microwave while you make your coffee and you're golden. Are these the healthiest ever, ever? No…but needs must and we try to pick options with some redeeming qualities. OR make them yourself!

BONUS TIP: frozen fruit makes a great lunch addition! Frozen pineapple pieces, pitted cherries, or mango chunks make it easy to offer variety - plus you can throw them in a bag or container frozen and they'll be thawed by lunch.

A little novelty goes a long way, especially when kids are in a “no thanks to everything” phase.

A few formats that consistently work:

🥣 Thermos lunches

This is where your freezer stash and leftovers shine.

There's lots of different thermos containers available- pick your favorite!

🥨 “Dunk” lunches

Something about dipping just works.

  • hummus + veggies

  • chocolate black bean dip + pretzels

  • PB yogurt + apples

  • ranch + everything

It’s the same food, just more fun. We love these containers since they're leak proof and durable.

🍡 Food on a stick = eaten

We don’t make the rules. Ideas include:

  • waffle + fruit stacks (using frozen fruit is perfect here!)

  • sandwich cubes

  • cheese + fruit + deli meat

  • meatballs + cherry tomatoes

  • tortellini + mozzarella balls
